TARRYTOWN, N.Y.--GNT's (www.gnt-group.com) Exberry® color line has two new additions. Shade Bordeaux is a kosher grape skin extract(GSE) made from fruits and vegetables that imparts a purple color. Unlike GSE, Shade Bordeaux can be used in fruit preparations, bakery bits, sugar confections, yogurts, smoothies, ice cream, gelatin desserts and most soft drinks. The second addition, Shade Mango Yellow, is also made from fresh fruits and vegetables and imparts gradations of yellows, oranges and light reds independent of pH. Shade Mango Yellow is a replacement for annatto, ideal for yogurts, cheeses, milk drinks and other lipid-based dairy applications. It can also be used in water-based applications for confectionary goods, fruit preparations, preserves, baked goods, puddings, sherbets and sorbets.
